WILD GARLIC, BABY

SPINACH AND OLIVE

Wild garlic, with its many sulphur compounds, helps to clear the inside of the digestive tract. It detoxifies the gut from pathogens and at the same time supports the ‘good’ bacteria. It kills many parasites and may assist in clearing Candida albicans, a common yeast infection. Wild garlic is a truly versatile and health-boosting plant.

SERVES 2

80g brown rice

1 tbsp olive oil

2 shallots, finely sliced

50g wild garlic, roughly chopped

50g baby spinach

50g Kalamata olives, stoned and sliced

500ml chicken or vegetable stock (here or here)

Cook the brown rice according to the packet instructions, then drain.

Meanwhile, heat the oil in a large frying pan or wok, add the shallots and sauté for a few minutes until soft. Add in the wild garlic and cook for a couple of minutes before adding the baby spinach and olives. Give everything a good stir and cook until the spinach is just wilted.

Meanwhile, heat the stock in a large pan. Divide the cooked rice between two bowls and top with the wild garlic, spinach and olives, then ladle over the hot stock.
